- 70 g bulgur wheat
- 100 g zucchini medium diced
- 1 piece spicy merguez sausage piece
- 1 tablespoon olive oil extra virgin
- 50 g onion medium diced
- 1 piece garlic clove minced
- 150 ml vegetable broth low sodium
- 0.5 teaspoon ground cumin
- 0.5 teaspoon paprika ground
- 0.25 teaspoon black pepper ground
- 0.25 teaspoon salt fine
- 5 g fresh parsley chopped

Instructions
- Bring vegetable broth to a boil in a small saucepan.
- Add bulgur wheat to the boiling broth, cover, and reduce heat to low.
- Simmer bulgur wheat for 12 minutes until tender and liquid is absorbed.
- While bulgur cooks, heat olive oil in a skillet over medium heat.
- Add diced onion to the skillet and cook until translucent, about 3 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Add diced zucchini to the skillet and cook for 5 minutes until slightly softened.
- Add ground cumin, paprika, black pepper, and salt to the skillet and stir to combine.
- Remove casing from spicy merguez sausage and crumble into the skillet.
- Cook sausage with vegetables until browned and cooked through, about 6 minutes.
- Fluff cooked bulgur wheat with a fork and transfer to a serving plate.
- Top bulgur wheat with the spicy merguez and vegetable mixture.
- Garnish with chopped fresh parsley before serving.
