- 200 g ripe red tomatoes chopped
- 100 ml fresh orange juice
- 50 g carrot peeled and diced
- 40 g onion diced
- 1 piece garlic clove minced
- 250 ml vegetable broth low sodium
- 1 tablespoon olive oil extra virgin
- 5 g fresh basil leaves chopped
- 1 pinch ground black pepper
- 1 pinch sea salt

Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add diced onion and minced garlic clove to the pan and cook until softened, about 3 minutes.
- Add diced carrot and cook for another 2 minutes, stirring occasionally.
- Add chopped ripe red tomatoes to the pan and cook for 5 minutes until they start to break down.
- For in vegetable broth and bring the mixture to a boil.
- Reduce heat and simmer for 15 minutes until vegetables are tender.
- Remove from heat and let cool slightly, then transfer soup to a blender.
- Add fresh orange juice and chopped fresh basil leaves to the blender.
- Blend the soup until smooth and creamy.
- Return the blended soup to the saucepan and warm gently over low heat.
- Season with sea salt and ground black pepper to taste.
- Serve hot, garnished with a few fresh basil leaves if desired.
