  • 1 piece flour tortilla 25cm diameter
  • 100 g cooked white rice
  • 50 g shredded cheddar cheese
  • 10 g unsalted butter
  • 30 g green bell pepper diced
  • 20 g red onion diced
  • 1 pinch ground black pepper
  • 1 pinch salt

  1. Heat a nonstick skillet over medium heat.
  2. Add unsalted butter to the skillet and let it melt completely.
  3. Place one flour tortilla flat in the skillet.
  4. Evenly spread cooked white rice over half of the tortilla.
  5. Sprinkle diced green bell pepper and diced red onion over the rice.
  6. Add shredded cheddar cheese on top of the vegetables and rice.
  7. Season with a pinch of salt and ground black pepper.
  8. Fold the tortilla in half to cover the filling.
  9. Cook for 2 to 3 minutes until the bottom is golden brown and the cheese starts to melt.
  10. Carefully flip the quesadilla using a spatula.
  11. Cook the other side for another 2 to 3 minutes until golden brown and cheese is fully melted.
  12. Remove from skillet and let it rest for 1 minute before cutting into wedges.
  13. Serve warm and enjoy your cheesy rice quesadilla.
