  • 50 g yellow onion diced
  • 1 piece garlic clove minced
  • 40 g red bell pepper diced
  • 120 g fresh corn kernels
  • 100 g medium potato peeled and diced
  • 250 ml vegetable broth low sodium
  • 100 ml coconut milk full fat
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

Instructions

  1. Heat olive oil in a medium pot over medium heat.
  2. Add diced yellow onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add diced red bell pepper and cook for 3 minutes until slightly softened.
  5. Stir in ground cumin, smoked paprika, and cayenne pepper; cook for 1 minute to release flavors.
  6. Add diced potato and fresh corn kernels to the pot and stir well.
  7. For in vegetable broth and bring to a boil.
  8. Reduce heat to low and simmer for 15 minutes until potatoes are tender.
  9. Add coconut milk and stir to combine, warming through for 5 minutes without boiling.
  10. Season with salt and ground black pepper to taste.
  11. Remove from heat and stir in chopped fresh cilantro.
  12. Serve hot, garnished with extra cilantro if desired.

  • Use fresh corn for best flavor but frozen corn can be used if fresh is unavailable.
