  • 60 g all purpose flour
  • 15 g granulated sugar
  • 1 teaspoon baking powder
  • 30 g unsalted butter cold diced
  • 30 ml whole milk
  • 50 ml heavy cream chilled
  • 0.5 teaspoon vanilla extract
  • 5 g powdered sugar

  1. Preheat oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  2. In a mixing bowl, combine all purpose flour, granulated sugar, and baking powder.
  3. Add cold diced unsalted butter to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. For in whole milk and stir gently until just combined to form a soft dough. Do not overmix.
  5. Turn the dough onto a floured surface and gently pat it into a 1 inch thick round.
  6. Cut the dough into a 10 cm diameter circle and place it on a baking sheet lined with parchment paper.
  7. Bake the shortcake in the preheated oven for 12 to 15 minutes or until golden brown on top.
  8. While the shortcake bakes, whip the heavy cream with vanilla extract and powdered sugar until soft peaks form.
  9. Slice the fresh ripe peach thinly and set aside.
  10. Once the shortcake is baked and slightly cooled, slice it horizontally to create two layers.
  11. Place the bottom half of the shortcake on a plate, layer with sliced peaches, then add a generous dollop of whipped cream.
  12. Top with the other half of the shortcake and add more peaches and whipped cream on top if desired.
