  • 350 g pork shank bone-in
  • 30 ml lemon juice fresh
  • 5 g lemon zest grated
  • 2 piece garlic clove minced
  • 50 g yellow onion diced
  • 40 g carrot peeled diced
  • 30 g celery stalk diced
  • 200 ml chicken broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 piece fresh thyme sprig
  • 1 teaspoon salt kosher
  • 0.5 teaspoon black pepper ground

  1. Preheat oven to 160 degrees Celsius (320 Fahrenheit).
  2. Pat pork shank dry with paper towels and season all sides with kosher salt and ground black pepper.
  3. Heat extra virgin olive oil in a heavy oven-safe pot over medium-high heat.
  4. Add pork shank and brown on all sides until golden, about 4 minutes per side, then remove and set aside.
  5. Add diced yellow onion, carrot, celery, and minced garlic to the pot and cook until softened, about 5 minutes.
  6. Add fresh thyme sprig, lemon zest, and lemon juice to the vegetables and stir to combine.
  7. Return pork shank to the pot and For in low sodium chicken broth until it reaches halfway up the meat.
  8. Bring liquid to a simmer on the stove, then cover the pot with a lid and transfer to the preheated oven.
  9. Braise pork shank in the oven for 2 to 2.5 hours until meat is tender and falling off the bone.
  10. Remove pot from oven and let pork rest in the braising liquid for 10 minutes before serving.
