- 200 g goose thigh skinless
- 80 g carrot baby peeled
- 60 g baby turnip peeled
- 50 g baby onion peeled
- 1 piece garlic clove minced
- 200 ml chicken broth low sodium
- 50 ml dry white wine
- 1 tablespoon olive oil extra virgin
- 1 piece fresh thyme sprig
- 1 piece bay leaf dried
- 1 pinch salt fine
- 1 pinch black pepper ground

- Pat dry the goose thigh and cut into bite-sized pieces.
- Heat olive oil in a heavy-bottomed pot over medium heat.
- Add goose pieces and brown on all sides, about 5 minutes.
- Remove browned goose and set aside.
- Add minced garlic and baby onions to the pot; cook until onions soften, about 3 minutes.
- For in dry white wine to deglaze the pot, scraping up browned bits.
- Return goose pieces to the pot.
- Add chicken broth, fresh thyme sprig, and bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Simmer gently for 1 hour, stirring occasionally.
- Add baby carrots and baby turnips to the stew.
- Continue simmering uncovered for 30 minutes until vegetables are tender and stew thickens.
- Season with salt and ground black pepper to taste.
- Remove thyme sprig and bay leaf before serving.
