  • 80 g leek white part sliced
  • 15 g unsalted butter
  • 1 piece garlic clove minced
  • 250 ml vegetable broth low sodium
  • 50 ml heavy cream
  • 1 pinch saffron threads
  • 1 pinch salt fine
  • 1 pinch black pepper ground

  1. Clean the leeks thoroughly and slice the white part into thin rings.
  2. Mince the garlic clove finely.
  3. In a medium saucepan, melt the unsalted butter over medium heat.
  4. Add the sliced leeks and minced garlic to the saucepan and cook gently for 5 minutes until softened but not browned.
  5. For in the vegetable broth and bring to a simmer.
  6. Add the saffron threads to the simmering broth and let infuse for 5 minutes.
  7. Add the fresh oysters to the pot and cook for 3 minutes until they just start to curl at the edges.
  8. Remove the pot from heat and use an immersion blender to blend the soup until smooth and creamy.
  9. Return the pot to low heat and stir in the heavy cream.
  10. Season the soup with fine salt and ground black pepper to taste.
  11. Heat gently for 2 more minutes without boiling, then remove from heat.
  12. Serve the soup hot, garnished with a few whole oysters or a sprinkle of fresh herbs if desired.
