  • 50 g all-purpose flour
  • 30 g unsalted butter chilled and cubed
  • 15 ml cold water
  • 40 g white button mushrooms sliced
  • 50 g shrimp peeled and deveined
  • 50 g mussels cleaned and debearded
  • 10 g unsalted butter
  • 1 piece large egg
  • 50 ml whole milk
  • 30 g grated cheddar cheese
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 1 piece garlic clove minced
  • 5 g fresh parsley chopped

Instructions

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a bowl, mix all-purpose flour and chilled unsalted butter with fingers until mixture resembles coarse crumbs.
  3. Add cold water gradually and mix until dough forms a ball. Wrap in plastic and chill for 15 minutes.
  4. Roll out dough on floured surface to fit a 15 cm tart pan. Press dough into pan and trim edges.
  5. Prick dough base with fork and bake blind with parchment and weights for 10 minutes.
  6. Remove weights and parchment, bake crust for 5 more minutes until lightly golden.
  7. Heat unsalted butter in pan over medium heat. Add minced garlic and sliced mushrooms, cook until mushrooms soften and moisture evaporates.
  8. Add shrimp and mussels to pan, cook until shrimp turn pink and mussels open. Remove from heat.
  9. In a bowl, whisk large egg with whole milk, salt, and ground black pepper.
  10. Spread cooked seafood and mushrooms evenly over baked crust.
  11. For egg mixture over seafood and sprinkle grated cheddar cheese on top.
  12. Bake quiche in oven for 20 minutes or until filling is set and top is golden.
  13. Remove from oven and let rest for 5 minutes before slicing.
  14. Garnish with chopped fresh parsley and serve warm.
