  • 150 g pork shoulder lean trimmed
  • 1 piece whole wheat sandwich bun
  • 30 ml low sugar barbecue sauce
  • 20 g red onion thinly sliced
  • 15 g green leaf lettuce fresh
  • 1 piece garlic clove minced
  • 0.5 teaspoon smoked paprika ground
  • 0.25 teaspoon black pepper ground
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon apple cider vinegar
  • 50 ml water

  1. Preheat oven to 150 degrees Celsius (300 Fahrenheit).
  2. Mix smoked paprika, black pepper, and minced garlic in a small bowl.
  3. Rub the spice mixture evenly over the pork shoulder piece.
  4. Heat olive oil in an oven-safe pan over medium heat.
  5. Sear the pork shoulder on all sides until golden brown, about 2 minutes per side.
  6. Add apple cider vinegar and water to the pan around the pork.
  7. Cover the pan with a lid or foil and place it in the preheated oven.
  8. Cook the pork slowly for 3 hours until tender and easy to shred.
  9. Remove pork from oven and let it rest for 10 minutes.
  10. Use two forks to shred the pork into bite-sized pieces.
  11. Mix shredded pork with low sugar barbecue sauce thoroughly.
  12. Slice the whole wheat sandwich bun in half and toast lightly if desired.
  13. Place green leaf lettuce on the bottom half of the bun.
  14. Add a generous portion of the BBQ pulled pork on top of the lettuce.
  15. Top with thinly sliced red onion and cover with the bun top.
  16. Serve immediately while warm.
