- 200 g ripe red tomatoes chopped
- 50 g cucumber peeled and diced
- 30 g red bell pepper seeded and chopped
- 1 piece small garlic clove minced
- 15 ml extra virgin olive oil
- 10 ml white wine vinegar
- 20 g fresh white bread crust removed
- 50 ml cold water
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Wash and chop the ripe red tomatoes into small pieces.
- Peel and dice the cucumber into small cubes.
- Seed and chop the red bell pepper into small pieces.
- Peel and mince the small garlic clove finely.
- Remove crust from fresh white bread and soak bread in cold water for 5 minutes.
- In a blender, combine chopped tomatoes, cucumber, red bell pepper, minced garlic, soaked bread with water, extra virgin olive oil, and white wine vinegar.
- Blend all ingredients until smooth and creamy.
- Season the gazpacho with salt and ground black pepper to taste.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve cold, optionally garnished with diced vegetables or a drizzle of olive oil.
