  • 200 g ripe red tomatoes chopped
  • 50 g cucumber peeled and diced
  • 30 g red bell pepper seeded and chopped
  • 1 piece small garlic clove minced
  • 15 ml extra virgin olive oil
  • 10 ml white wine vinegar
  • 20 g fresh white bread crust removed
  • 50 ml cold water
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Wash and chop the ripe red tomatoes into small pieces.
  2. Peel and dice the cucumber into small cubes.
  3. Seed and chop the red bell pepper into small pieces.
  4. Peel and mince the small garlic clove finely.
  5. Remove crust from fresh white bread and soak bread in cold water for 5 minutes.
  6. In a blender, combine chopped tomatoes, cucumber, red bell pepper, minced garlic, soaked bread with water, extra virgin olive oil, and white wine vinegar.
  7. Blend all ingredients until smooth and creamy.
  8. Season the gazpacho with salt and ground black pepper to taste.
  9. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  10. Serve cold, optionally garnished with diced vegetables or a drizzle of olive oil.
