  • 1 piece garlic clove minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dijon mustard
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 1 piece brioche bun
  • 1 tablespoon butter unsalted
  • 1 piece emmental cheese slice
  • 30 g mixed salad leaves
  • 2 piece tomato slice

  1. In a bowl, combine ground veal, minced shallot, minced garlic clove, chopped fresh parsley, dijon mustard, salt, and ground black pepper.
  2. Mix all ingredients gently with your hands until just combined; avoid overmixing to keep the burger tender.
  3. Form the mixture into a round patty about 1.5 cm thick and set aside.
  4. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  5. Place the veal patty in the skillet and cook for 4 minutes on one side without moving it.
  6. Flip the patty carefully and cook for another 3 minutes.
  7. Place a slice of emmental cheese on top of the patty and cover the skillet with a lid to melt the cheese for 1-2 minutes.
  8. While the burger cooks, slice the brioche bun in half and spread unsalted butter on the cut sides.
  9. Toast the buttered brioche bun halves in a separate pan or toaster until golden brown.
  10. Assemble the burger by placing the cooked veal patty with melted cheese on the bottom bun.
  11. Add mixed salad leaves and tomato slices on top of the patty.
  12. Cover with the top half of the brioche bun and serve immediately.
