  • 0.5 teaspoon vanilla extract

  1. Preheat the oven to 160 degrees Celsius (320 Fahrenheit).
  2. In a mixing bowl, combine rolled oats, chopped raw almonds, ground cinnamon, and a pinch of salt.
  3. In a small bowl, whisk together honey, maple syrup, melted coconut oil, and vanilla extract until well blended.
  4. For the wet mixture over the dry ingredients and stir thoroughly to coat all oats and nuts.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20 minutes, stirring halfway through to ensure even toasting.

  8. Once cooled, stir in dried cranberries and chopped dried apricots.
