- 75 g elbow macaroni dry
- 30 g raw cashews
- 100 ml unsweetened almond milk
- 15 g nutritional yeast flakes
- 1 piece garlic clove minced
- 1 tablespoon lemon juice fresh
- 1 teaspoon yellow mustard prepared
- 0.5 teaspoon smoked paprika ground
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper ground
- 1 tablespoon olive oil extra virgin

Instructions
- Bring a pot of salted water to a boil.
- Add elbow macaroni dry to boiling water and cook until al dente, about 8 minutes.
- Drain macaroni and set aside.
- Soak raw cashews in hot water for 15 minutes to soften.
- Drain cashews and place them in a blender.
- Add unsweetened almond milk, nutritional yeast flakes, garlic clove minced, lemon juice fresh, yellow mustard prepared, smoked paprika ground, sea salt, and black pepper ground to the blender.
- Blend ingredients until smooth and creamy.
- Heat olive oil extra virgin in a saucepan over medium heat.
- For the cashew cheese sauce into the saucepan and cook, stirring constantly, until warmed through and slightly thickened, about 3 minutes.
- Add cooked macaroni to the sauce and stir well to coat evenly.
- Serve hot and enjoy your creamy vegan macaroni and cheese.
