- 150 g raw shrimp peeled and deveined
- 50 g red bell pepper diced
- 40 g pineapple chunks canned
- 30 g white onion diced
- 1 piece garlic clove minced
- 15 ml vegetable oil
- 10 ml rice vinegar
- 20 ml ketchup
- 10 g brown sugar
- 10 ml soy sauce low sodium
- 5 g cornstarch
- 30 ml water
- 10 g green onion sliced

- Prepare all ingredients: dice red bell pepper and white onion, mince garlic clove, slice green onion, and measure pineapple chunks.
- In a small bowl, mix rice vinegar, ketchup, brown sugar, soy sauce, cornstarch, and water until smooth to make the sweet and sour sauce.
- Heat vegetable oil in a wok or large skillet over medium-high heat until hot.
- Add minced garlic and diced white onion to the wok, stir fry for 1 minute until fragrant and slightly softened.
- Add raw shrimp to the wok and cook for 2-3 minutes until they turn pink and are nearly cooked through.
- Add diced red bell pepper and pineapple chunks to the wok, stir fry for 1-2 minutes to combine flavors.
- For the prepared sweet and sour sauce over the shrimp and vegetables in the wok.
- Stir continuously and cook for 2-3 minutes until the sauce thickens and coats the shrimp and vegetables evenly.
- Remove from heat and garnish with sliced green onion before serving.
