  • 30 g blue cheese crumbled
  • 2 piece large egg
  • 10 g unsalted butter
  • 30 ml whole milk
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Clean and slice the white and light green parts of the leek into thin rings.
  3. Melt unsalted butter in a skillet over medium heat.
  4. Add sliced leeks to the skillet and cook gently for 5 minutes until soft but not browned.
  5. Season the leeks with a pinch of salt and ground black pepper, stir well.
  6. Add whole milk to the skillet and stir to combine, then remove from heat.
  7. Lightly butter a small ovenproof dish or ramekin.
  8. Transfer the cooked leeks and milk mixture into the prepared dish, spreading evenly.
  9. Crack two large eggs on top of the leek mixture, spacing them evenly.
  10. Sprinkle crumbled blue cheese evenly over the eggs and leeks.
  11. Place the dish in the preheated oven and bake for 12 to 15 minutes until egg whites are set but yolks remain soft.
  12. Remove from oven and let rest for 2 minutes before serving.
