  • 150 g broccoli florets fresh
  • 50 g carrot peeled diced
  • 30 g celery stalk diced
  • 40 g onion yellow diced
  • 1 piece garlic clove minced
  • 300 ml vegetable broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 pinch black pepper ground
  • 1 pinch salt fine

  1. Wash broccoli florets thoroughly under cold water and set aside.
  2. Peel and dice the carrot into small uniform pieces.
  3. Dice the celery stalk into small pieces.
  4. Peel and dice the yellow onion finely.
  5. Peel and mince the garlic clove.
  6. Heat the extra virgin olive oil in a medium pot over medium heat.
  7. Add the diced onion and minced garlic to the pot and cook until translucent, about 3 minutes, stirring occasionally.
  8. Add the diced carrot and celery to the pot and cook for another 5 minutes, stirring occasionally.
  9. Add the broccoli florets to the pot and stir well to combine.
  10. For in the low sodium vegetable broth and bring the mixture to a boil.
  11. Reduce heat to low and let the soup simmer for 15 minutes or until all vegetables are tender.
  12. Use an immersion blender to puree the soup until smooth and creamy, or transfer to a blender in batches and blend carefully.
  13. Season the soup with a pinch of fine salt and ground black pepper to taste.
  14. Stir well and let the soup rest for 2 minutes before serving.
