- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon black pepper ground

Instructions
- Pat the beef short ribs dry with paper towels to remove excess moisture.
- In a small bowl, combine smoked paprika, brown sugar, ground cumin, chili powder, garlic powder, onion powder, ground black pepper, and kosher salt to make the dry rub.
- Rub the vegetable oil evenly over the short ribs to help the dry rub stick.
- Generously coat the short ribs with the spicy dry rub on all sides, pressing it into the meat.
- Preheat the grill to medium heat, about 175-200 degrees Celsius (350-400 Fahrenheit).
- Place the short ribs on the grill and cook with the lid closed for 20 minutes.
- Flip the ribs and continue grilling for another 20 minutes, brushing with apple cider vinegar every 10 minutes to keep moist and add tang.
- Check for doneness; ribs should be tender and have a smoky crust from the dry rub.
- Remove the ribs from the grill and let rest for 5 minutes before serving to allow juices to redistribute.
Tips
- Use a meat thermometer to ensure ribs reach an internal temperature of 90C for tenderness.
- Let the ribs rest after grilling to keep them juicy.
- Adjust the chili powder amount to control spiciness level.
