  • 75 g arborio rice
  • 300 ml vegetable broth low sodium
  • 15 g unsalted butter
  • 10 ml olive oil extra virgin
  • 30 g onion white diced
  • 1 piece garlic clove minced
  • 40 g green peas fresh
  • 40 g asparagus tips chopped
  • 40 g zucchini small diced
  • 20 g parmesan cheese grated
  • 50 ml dry white wine
  • 5 g fresh parsley chopped
  • 3 g fresh chives chopped
  • 1 pinch salt fine
  • 1 pinch black pepper ground

Instructions

  1. Heat vegetable broth in a saucepan and keep it warm on low heat.
  2. In a separate large pan, heat olive oil and half the butter over medium heat.
  3. Add diced white onion and minced garlic clove; cook until translucent, about 3 minutes.
  4. Add arborio rice to the pan and stir to coat the grains with oil and butter; cook for 2 minutes until slightly translucent edges.
  5. For in dry white wine and stir until it is mostly absorbed by the rice.
  6. Add a ladle of warm vegetable broth to the rice and stir continuously until the liquid is mostly absorbed.
  7. Repeat adding broth one ladle at a time, stirring constantly, until rice is creamy and al dente, about 18 minutes.
  8. Five minutes before the rice is done, add chopped asparagus tips, diced zucchini, and fresh green peas to the risotto; stir well.
  9. Once rice and vegetables are cooked, remove from heat and stir in remaining butter, grated parmesan cheese, chopped parsley, and chopped chives.
  10. Season with fine salt and ground black pepper to taste.
  11. Cover the pan and let the risotto rest for 2 minutes before serving.
