  • 15 g granulated sugar white
  • 5 ml lemon juice fresh
  • 30 ml heavy cream cold
  • 2 piece fresh mint leaves chopped
  • 30 g cucumber peeled diced
  • 1 pinch sea salt pinch

  1. Separate egg whites from yolks carefully, placing whites in a clean bowl.
  2. Add granulated sugar and lemon juice to the egg whites.
  3. Using an electric mixer, beat the egg whites on medium speed until soft peaks form.
  4. Continue beating while slowly adding cold heavy cream until stiff peaks form and mixture is fluffy.
  5. Gently fold in chopped fresh mint leaves and diced peeled cucumber with a spatula.
  6. Add a pinch of sea salt and mix lightly to combine all ingredients.
  7. Spoon the sea foam salad into a serving bowl and chill in the refrigerator for 15 minutes before serving.
