  • 50 g corn kernels frozen
  • 40 g red bell pepper diced
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 250 ml chicken broth low sodium
  • 100 g diced tomatoes canned
  • 50 ml enchilada sauce
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 1 tablespoon lime juice fresh
  • 5 g fresh cilantro chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic clove; cook until onion is translucent, about 3 minutes.
  3. Add diced red bell pepper and cook for 2 more minutes, stirring occasionally.
  4. Add diced skinless chicken breast to the pot and cook until no longer pink, about 5 minutes.
  5. Stir in ground cumin, chili powder, salt, and black pepper; cook for 1 minute to release flavors.
  6. For in chicken broth, canned diced tomatoes, enchilada sauce, black beans, and frozen corn kernels.
  7. Bring the soup to a boil, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
  8. Remove from heat and stir in fresh lime juice and chopped fresh cilantro.
