  • 1 tablespoon orange zest

  • 60 ml low fat buttermilk
  • 30 ml vegetable oil
  • 0.5 teaspoon vanilla extract
  • 50 g fresh blueberries

  1. Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit).
  2. Line a muffin tin with paper liners or grease it lightly with vegetable oil.
  3. In a large bowl, combine wheat bran, all purpose flour, baking powder, baking soda, salt, and granulated sugar. Mix well.
  4. In a separate bowl, whisk together the egg, low fat buttermilk, vegetable oil, orange zest, and vanilla extract until smooth.
