- 200 g veal shoulder cubes
- 15 g unsalted butter
- 10 g all-purpose flour
- 50 g onion diced
- 40 g carrot sliced
- 30 g celery stalk sliced
- 1 piece garlic clove minced
- 50 ml dry white wine
- 150 ml chicken broth low sodium
- 50 ml whole milk
- 30 ml heavy cream
- 1 teaspoon fresh thyme leaves
- 1 pinch salt
- 1 pinch black pepper ground

- Cut veal shoulder into 2 cm cubes if not pre-cut.
- Heat unsalted butter in a heavy pot over medium heat until melted and foaming.
- Add veal cubes and brown on all sides, about 5 minutes, then remove and set aside.
- Add diced onion, sliced carrot, sliced celery, and minced garlic to the pot and cook until softened, about 5 minutes.
- Sprinkle all-purpose flour over the vegetables and stir well to coat, cooking for 2 minutes to remove raw flour taste.
