  1. Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  2. Peel the carrot and cut it into sticks about 5 cm long.
  3. Trim the fennel bulb, remove the tough outer layers, and slice it into wedges.
  4. In a mixing bowl, combine the maple syrup, fresh orange juice, and extra virgin olive oil.
  5. Add the carrot sticks and fennel wedges to the bowl and toss well to coat them evenly with the glaze.
