  • 150 g wild snails cleaned
  • 20 g unsalted butter
  • 1 piece garlic clove minced
  • 1 piece shallot diced
  • 5 g fresh parsley chopped
  • 2 g fresh thyme leaves
  • 2 g fresh rosemary chopped
  • 30 ml dry white wine
  • 50 ml heavy cream
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 10 g bread crumbs

Instructions

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. Rinse wild snails thoroughly and drain well.
  3. Melt unsalted butter in a skillet over medium heat.
  4. Add minced garlic clove and diced shallot to the skillet and cook until soft and fragrant, about 2 minutes.
  5. Add wild snails to the skillet and cook for 3 minutes, stirring occasionally.
  6. For dry white wine into the skillet and simmer until reduced by half.
  7. Add heavy cream, fresh parsley, thyme leaves, and chopped rosemary to the skillet.
  8. Season with salt and ground black pepper, stir well and cook for 2 more minutes.
  9. Transfer the snail mixture into a small casserole dish.
  10. Sprinkle bread crumbs evenly over the top of the casserole.
  11. Place the casserole dish in the preheated oven and bake for 15 minutes or until the top is golden and bubbling.
  12. Remove from oven and let rest for 5 minutes before serving.
