  • 100 g medium cucumber peeled and sliced
  • 15 ml fresh lemon juice
  • 10 ml extra virgin olive oil
  • 5 g fresh parsley chopped
  • 1 piece garlic clove minced
  • 1 pinch sea salt
  • 1 pinch black pepper ground

  1. Bring a pot of water to a boil.
  2. Add fresh green beans trimmed to boiling water and cook for 3 minutes until tender-crisp.
  3. Drain green beans and immediately transfer to a bowl of ice water to stop cooking and keep color.
  4. Drain green beans from ice water and pat dry with paper towels.
  5. Peel and slice medium cucumber into thin rounds.
  6. In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, minced garlic clove, sea salt, and ground black pepper to make the dressing.
  7. In a large bowl, combine green beans, sliced cucumber, and chopped fresh parsley.
  8. For the lemon dressing over the salad and toss gently to coat all ingredients evenly.
