  • 80 g cornmeal (fine)
  • 250 ml whole milk
  • 20 g unsalted butter
  • 30 g granulated sugar
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt

Instructions

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a saucepan, bring the whole milk to a gentle boil over medium heat.
  3. Slowly whisk in the cornmeal and a pinch of salt to the boiling milk.
  4. Reduce heat to low and cook the mixture, stirring constantly, until thickened, about 5 minutes.
  5. Remove the saucepan from heat and stir in the unsalted butter until melted and combined.
  6. In a separate bowl, beat the large egg with granulated sugar and vanilla extract until smooth.
  7. Gradually add a few spoonfuls of the hot cornmeal mixture to the egg mixture, stirring constantly to temper the egg.
  8. For the egg mixture back into the saucepan with the remaining cornmeal mixture and stir well.
  9. For the pudding mixture into a greased baking dish.
  10. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden and a knife inserted comes out clean.
  11. Remove from oven and let cool slightly before serving.
