  • 100 g cooked fusilli pasta
  • 30 g red bell pepper diced
  • 40 g yellow cherry tomatoes halved
  • 30 g green cucumber diced
  • 15 g purple red onion finely diced
  • 20 g black olives sliced
  • 5 g fresh basil leaves chopped
  • 15 ml extra virgin olive oil
  • 10 ml fresh lemon juice
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Cook fusilli pasta in boiling salted water according to package instructions until al dente.
  2. Drain pasta and rinse under cold water to cool it down, then drain well.
  3. Dice red bell pepper into small pieces.
  4. Halve yellow cherry tomatoes.
  5. Dice green cucumber into small cubes.
  6. Finely dice purple red onion.
  7. Slice black olives into rings.
  8. Chop fresh basil leaves finely.
  9. In a large bowl, combine cooled pasta, red bell pepper, yellow cherry tomatoes, cucumber, red onion, black olives, and basil.
  10. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, salt, and ground black pepper to make the dressing.
  11. For dressing over the pasta mixture and toss gently to combine all ingredients evenly.
