- 180 g skinless chicken thigh
- 50 ml champagne
- 15 ml armagnac
- 15 g unsalted butter
- 1 piece shallot minced
- 100 ml chicken broth low sodium
- 30 ml heavy cream
- 1 tablespoon olive oil
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 190 degrees Celsius (375 Fahrenheit).
- Pat dry the skinless chicken thigh and season with salt and ground black pepper on both sides.
- Heat olive oil in an oven-safe skillet over medium heat.
- Place the chicken thigh skin side down and cook until golden brown, about 5 minutes.
- Flip the chicken and cook the other side for 3 minutes.
- Remove the skillet from heat and transfer it to the preheated oven.
- Bake the chicken for 15 minutes until cooked through.
- While chicken bakes, melt unsalted butter in a small saucepan over medium heat.
- Add minced shallot and cook until translucent, about 2 minutes.
- For in champagne and armagnac, simmer until reduced by half.
- Add chicken broth and continue simmering until sauce thickens slightly.
- Stir in heavy cream and cook for 2 more minutes, then remove from heat.
- Remove chicken from oven and let rest for 5 minutes.
- Serve chicken with the champagne and armagnac sauce spooned over the top.

- Use a meat thermometer to ensure chicken reaches 75C (165F) internally.
