  • 180 g skinless chicken thigh
  • 50 ml champagne
  • 15 ml armagnac
  • 15 g unsalted butter
  • 1 piece shallot minced
  • 100 ml chicken broth low sodium
  • 30 ml heavy cream
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Preheat oven to 190 degrees Celsius (375 Fahrenheit).
  2. Pat dry the skinless chicken thigh and season with salt and ground black pepper on both sides.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Place the chicken thigh skin side down and cook until golden brown, about 5 minutes.
  5. Flip the chicken and cook the other side for 3 minutes.
  6. Remove the skillet from heat and transfer it to the preheated oven.
  7. Bake the chicken for 15 minutes until cooked through.
  8. While chicken bakes, melt unsalted butter in a small saucepan over medium heat.
  9. Add minced shallot and cook until translucent, about 2 minutes.
  10. For in champagne and armagnac, simmer until reduced by half.
  11. Add chicken broth and continue simmering until sauce thickens slightly.
  12. Stir in heavy cream and cook for 2 more minutes, then remove from heat.
  13. Remove chicken from oven and let rest for 5 minutes.
  14. Serve chicken with the champagne and armagnac sauce spooned over the top.

  • Use a meat thermometer to ensure chicken reaches 75C (165F) internally.
  • Let the chicken rest after baking to keep it juicy.
