- 100 g dark chocolate 70% cocoa
- 2 piece large egg yolk
- 2 piece large egg white
- 20 g granulated sugar
- 100 ml heavy cream 35% fat
- 0.5 teaspoon vanilla extract
- 1 pinch pinch of salt

- Break the dark chocolate into small pieces and melt it gently in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- Separate the egg yolks from the whites carefully, placing yolks in one bowl and whites in another clean bowl.
- Whisk the egg yolks with vanilla extract until pale and creamy.
- Slowly add the melted chocolate into the egg yolks mixture while stirring continuously to combine well.
- In a separate bowl, beat the heavy cream until it forms soft peaks.
- Add a pinch of salt to the egg whites and beat them until stiff peaks form.
- Gently fold the whipped cream into the chocolate and egg yolk mixture using a spatula, mixing carefully to keep it airy.
- Next, fold the beaten egg whites into the chocolate mixture in three additions, folding gently to maintain volume.
- Divide the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
- Serve chilled, optionally garnished with chocolate shavings or fresh berries.
