- 1 teaspoon baking powder
- 30 g brown sugar
- 30 g unsalted butter chilled diced
- 30 g currants
- 10 g mixed peel chopped
- 50 ml whole milk
- 0.5 piece egg beaten

- In a large bowl, sift together the plain flour and baking powder.
- Add the brown sugar, currants, and chopped mixed peel to the flour mixture and stir to combine.
- Add the chilled diced unsalted butter to the dry ingredients and rub it in with your fingertips until the mixture resembles fine breadcrumbs.
- Make a well in the center of the mixture and For in the beaten egg and whole milk.
- Mix gently with a wooden spoon until a soft dough forms; do not overmix.
- Turn the dough onto a lightly floured surface and shape it into a round cake about 2 cm thick.
