  • 30 g lemon curd
  • 20 g fresh blueberries
  • 1 piece large egg beaten
  • 30 ml whole milk
  • 10 g unsalted butter
  • 1 pinch powdered sugar for dusting

  1. Lay out two slices of white sandwich bread and remove crusts with a knife.
  2. Using a rolling pin, flatten each bread slice gently until thin and even.
  3. Spread 15 g of lemon curd evenly over each flattened bread slice.
  4. Place 10 g of fresh blueberries along one edge of each bread slice.
  5. Roll up each bread slice tightly from the blueberry edge to form a roll-up.
  6. In a shallow bowl, whisk together one large beaten egg and 30 ml whole milk until combined.
  7. Heat 10 g unsalted butter in a nonstick skillet over medium heat until melted and foamy.
  8. Dip each roll-up into the egg mixture, turning to coat all sides well.
  9. Place the coated roll-ups seam side down in the skillet and cook for 2-3 minutes until golden brown.
  10. Carefully turn the roll-ups and cook the other side for another 2-3 minutes until golden and cooked through.
  11. Remove roll-ups from skillet and place on a serving plate.
  12. Dust the roll-ups lightly with powdered sugar before serving.
