  • 15 g pine nuts
  • 20 g parmesan cheese grated
  • 30 ml extra virgin olive oil
  • 1 piece garlic clove minced

  • 1 pinch black pepper ground

  1. Preheat the oven to 200 degrees Celsius (about 400 Fahrenheit).
  2. Roll out the puff pastry sheet on a baking tray lined with parchment paper.
  3. Prick the pastry surface lightly with a fork to prevent puffing.
  4. Wash and halve the cherry tomatoes.
  5. Bake the puff pastry in the oven for 10 minutes until lightly golden.
  6. While the pastry bakes, prepare the basil pesto: place fresh basil leaves, pine nuts, grated parmesan cheese, minced garlic clove, salt, and black pepper in a blender.
  7. Slowly add extra virgin olive oil while blending until smooth and creamy.
  8. Remove the pastry from the oven and spread a thin layer of basil pesto evenly over it.
  9. Arrange the halved cherry tomatoes on top of the pesto layer.
  10. Return the tart to the oven and bake for an additional 10 minutes until tomatoes are soft and pastry is golden brown.
