  • 1 tablespoon vegetable oil

Instructions

  1. Rinse the long grain white rice under cold water until water runs clear to remove excess starch.
  2. Heat vegetable oil in a medium saucepan over medium heat.
  3. Add minced garlic clove to the oil and cook for 1 minute until fragrant but not browned.
  4. Add the rinsed rice to the saucepan and stir to coat the rice with oil and garlic, cooking for 2 minutes.
  5. For in the coconut milk and water, then add a pinch of salt and stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low and cover the saucepan with a tight-fitting lid.
  7. Simmer the rice for 15 minutes without lifting the lid to allow it to cook and absorb the liquid.
  8. Remove the saucepan from heat and let the rice rest covered for 5 minutes to finish steaming.
  9. Fluff the rice gently with a fork and stir in the chopped fresh cilantro leaves before serving.

Tips

  • Use canned coconut milk with no added sugar for best flavor.
  • Do not lift the lid while the rice is cooking to ensure proper steaming.
  • Fresh cilantro should be added at the end to preserve its bright flavor.
