  • 50 g milk chocolate
  • 100 ml heavy cream cold
  • 10 g granulated sugar
  • 1 piece large egg white fresh
  • 0.5 teaspoon vanilla extract pure

  1. Chop dark chocolate into small pieces and place in a heatproof bowl.
  2. Chop milk chocolate into small pieces and place in a separate heatproof bowl.
  3. Heat half of the heavy cream in a small saucepan until it just begins to simmer, then For over dark chocolate. Let sit 1 minute.
  4. Stir dark chocolate and cream mixture until smooth and glossy. Set aside to cool slightly.
  5. Repeat heating and pouring process with remaining heavy cream over milk chocolate, stirring until smooth. Set aside.
  6. In a clean bowl, beat egg white with granulated sugar until stiff peaks form.
  7. Add vanilla extract to dark chocolate mixture and stir gently.
  8. Fold half of the whipped egg white into the dark chocolate mixture carefully to lighten it.
  9. Fold the remaining egg white into the milk chocolate mixture gently to keep airiness.
  10. In serving glasses, layer dark chocolate mousse first, then milk chocolate mousse on top.
  11. Refrigerate mousse for at least 2 hours to set before serving.
