- 100 g plain whole milk yogurt
- 1 piece garlic clove minced
- 15 ml extra virgin olive oil
- 10 ml lemon juice fresh
- 5 g fresh parsley chopped
- 0.5 teaspoon ground cumin
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground

Instructions
- Preheat oven to 200 degrees Celsius (about 400 Fahrenheit).
- Place peeled and cubed eggplant on a baking sheet lined with parchment paper.
- Drizzle eggplant cubes with 10 ml of extra virgin olive oil and sprinkle with salt and ground black pepper.
- Toss eggplant gently to coat evenly and spread in a single layer.
- Roast eggplant in the oven for 25 minutes or until soft and lightly browned, stirring halfway through.
