  • 100 g dry spaghetti pasta
  • 50 g black olives pitted chopped
  • 15 ml extra virgin olive oil
  • 1 piece garlic clove minced
  • 30 g onion small diced
  • 10 g tomato paste
  • 5 g fresh basil leaves chopped
  • 100 ml water
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add dry spaghetti pasta to boiling water and cook until al dente, about 8 minutes.
  3. While pasta cooks, heat extra virgin olive oil in a medium skillet over medium heat.
  4. Add minced garlic clove and small diced onion to the skillet and cook until onion is translucent, about 3 minutes.
  5. Add chopped black olives to the skillet and cook for 2 minutes, stirring occasionally.
  6. Stir in tomato paste and cook for 1 minute to combine flavors.
  7. For water into the skillet and bring the sauce to a simmer.
  8. Add chopped fresh basil leaves, salt, and ground black pepper to the sauce and stir well.
  9. Drain the cooked pasta reserving some pasta water.
  10. Add drained pasta to the skillet with the sauce and toss to coat evenly, adding reserved pasta water if needed to loosen the sauce.
  11. Serve pasta hot, garnished with extra basil if desired.
