  • 50 g almond flour finely ground
  • 40 g all purpose flour
  • 30 g unsalted butter cold diced
  • 30 g granulated sugar
  • 20 g brown sugar packed
  • 1 piece egg large
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon vanilla extract
  • 15 g almond slices toasted
  • 1 pinch salt pinch

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a mixing bowl, combine almond flour, all purpose flour, granulated sugar, and a pinch of salt.
  3. Add cold diced unsalted butter to the dry ingredients and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  4. Press the dough evenly into a 15 cm tart pan, covering the bottom and sides. Chill in the refrigerator for 15 minutes.
  5. In another bowl, whisk together pumpkin puree, brown sugar, egg, ground cinnamon, ground nutmeg, and vanilla extract until smooth.
  6. For the pumpkin filling over the chilled tart crust and spread evenly.
  7. Sprinkle toasted almond slices on top of the filling.
  8. Bake the tart in the preheated oven for 35 to 40 minutes until the filling is set and the crust is golden.
  9. Remove the tart from the oven and let it cool completely on a wire rack before serving.
