- 50 g red bell pepper diced
- 50 g yellow bell pepper diced
- 100 g zucchini diced
- 30 g white onion diced
- 1 piece garlic clove minced
- 15 ml apple cider vinegar
- 10 g granulated sugar
- 10 ml olive oil
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Wash and dice the red bell pepper into small pieces.
- Wash and dice the yellow bell pepper into small pieces.
- Wash and dice the zucchini into small pieces.
- Peel and dice the white onion finely.
- Peel and mince the garlic clove.
- Heat olive oil in a medium saucepan over medium heat.
- Add diced onion and minced garlic to the pan and cook until translucent, about 3 minutes.
- Add diced red and yellow bell peppers and zucchini to the pan and cook for 5 minutes, stirring occasionally.
- Add apple cider vinegar, granulated sugar, salt, and ground black pepper to the pan and stir well.
- Reduce heat to low and simmer the mixture for 15 minutes, stirring occasionally until the vegetables are tender and the relish thickens.
- Remove from heat and let the relish cool to room temperature before serving or storing.
