  • 150 g zucchini medium sliced
  • 50 g red bell pepper diced
  • 40 g white onion diced
  • 1 piece garlic clove minced
  • 10 ml olive oil extra virgin
  • 15 ml apple cider vinegar
  • 10 g brown sugar packed
  • 20 ml ketchup tomato
  • 10 ml soy sauce low sodium
  • 5 g cornstarch
  • 30 ml water cold
  • 1 pinch salt fine
  • 1 pinch black pepper ground

  1. Wash and slice the zucchini into medium-thick rounds.
  2. Dice the red bell pepper and white onion into small pieces.
  3. Mince one garlic clove finely.
  4. In a small bowl, mix apple cider vinegar, brown sugar, ketchup, soy sauce, cornstarch, and cold water until smooth.
  5. Heat olive oil in a skillet over medium heat.
  6. Add diced onion and minced garlic to the skillet and cook until translucent, about 3 minutes.
  7. Add sliced zucchini and diced red bell pepper to the skillet and stir fry for 5 minutes until slightly tender.
  8. For the prepared sauce over the vegetables and stir continuously until the sauce thickens and coats the vegetables, about 2-3 minutes.
  9. Season with salt and ground black pepper to taste.
  10. Remove from heat and serve immediately.
