  • 150 g zucchini medium chopped
  • 80 g cooked crab meat shredded
  • 15 g unsalted butter
  • 40 g onion diced
  • 1 piece garlic clove minced
  • 250 ml vegetable broth low sodium
  • 50 ml heavy cream
  • 5 g fresh parsley chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Wash and chop the zucchini into small pieces.
  2. Dice the onion finely and mince the garlic clove.
  3. In a medium saucepan, melt the unsalted butter over medium heat.
  4. Add the diced onion and minced garlic to the pan and cook until soft and translucent, about 5 minutes.
  5. Add the chopped zucchini to the pan and cook for another 5 minutes, stirring occasionally.
  6. For in the low sodium vegetable broth and bring the mixture to a boil.
  7. Reduce heat and simmer for 15 minutes until the zucchini is tender.
  8. Use an immersion blender to puree the soup until smooth and creamy.
  9. Stir in the heavy cream and shredded cooked crab meat.
  10. Season with salt and ground black pepper to taste.
  11. Heat the soup gently for 3 minutes without boiling to warm the crab meat.
  12. Serve the soup hot, garnished with chopped fresh parsley.
