  • 150 g skinless chicken breast sliced
  • 10 g dried porcini mushrooms
  • 15 g unsalted butter
  • 1 piece garlic clove minced
  • 1 piece shallot minced
  • 30 ml dry white wine
  • 50 ml chicken broth low sodium
  • 5 g fresh parsley chopped
  • 10 ml olive oil extra virgin
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Place dried porcini mushrooms in a small bowl and cover with 50 ml hot water. Let soak for 20 minutes.
  2. Remove mushrooms from water, reserving soaking liquid. Chop mushrooms finely.
  3. Heat olive oil in a skillet over medium heat.
  4. Add minced shallot and garlic clove to skillet and cook until soft and fragrant, about 2 minutes.
  5. Add sliced chicken breast to skillet and cook until lightly browned on both sides, about 4 minutes per side.
  6. Add chopped porcini mushrooms to skillet and stir to combine.
  7. For in white wine and reserved mushroom soaking liquid, scraping any browned bits from the pan.
  8. Add chicken broth and bring mixture to a simmer.
  9. Reduce heat to low and cook until chicken is cooked through and sauce has slightly thickened, about 5 minutes.
  10. Stir in unsalted butter and chopped fresh parsley. Season with salt and black pepper to taste.
  11. Remove from heat and let rest for 2 minutes before serving.
