  • 180 g salmon fillet skinless
  • 15 g unsalted butter
  • 1 piece shallot minced
  • 50 ml dry white wine
  • 60 ml heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Pat dry the salmon fillet with paper towels and season both sides with salt and ground black pepper.
  2. Heat 10 g of unsalted butter in a nonstick skillet over medium heat until melted and hot.
  3. Place the salmon fillet in the skillet skinless side down and cook for 3-4 minutes without moving it to get a golden crust.
  4. Flip the salmon carefully and cook the other side for 2-3 minutes until cooked through but still moist inside.
  5. Remove the salmon from the skillet and keep warm on a plate covered loosely with foil.
  6. In the same skillet, add the remaining 5 g of unsalted butter and minced shallot; cook over medium heat until softened and translucent, about 2 minutes.
  7. For in the dry white wine and simmer until reduced by half, about 3 minutes.
  8. Lower the heat and stir in the heavy cream and Dijon mustard until the sauce is smooth and slightly thickened, about 2 minutes.
  9. Add chopped fresh parsley to the sauce and adjust seasoning with salt and pepper to taste.
  10. Return the salmon to the skillet briefly to warm through in the sauce, about 1 minute.
  11. Serve the salmon fillet topped with the creamy mustard sauce immediately.
