- 150 g cod fillet skinless
- 100 ml whole milk
- 15 g unsalted butter
- 10 g all purpose flour
- 30 g grated cheddar cheese
- 10 g grated parmesan cheese
- 1 piece garlic clove minced
- 30 g onion diced
- 5 g fresh parsley chopped
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 180 degrees Celsius (350 Fahrenheit).
- Lightly grease a small baking dish suitable for one serving.
- In a small saucepan, melt unsalted butter over medium heat.
- Add diced onion and minced garlic clove to the butter and cook until soft and translucent, about 3 minutes.
- Sprinkle all purpose flour over the butter and onion mixture and stir constantly for 1 minute to form a roux.
- Gradually whisk in whole milk, stirring continuously to avoid lumps, and cook until the sauce thickens and coats the back of a spoon.
- Remove sauce from heat and stir in half of the grated cheddar cheese and all grated parmesan cheese until melted and smooth.
- Season the sauce with a pinch of salt and ground black pepper, then stir in chopped fresh parsley.
- Place the cod fillet in the prepared baking dish and For the creamy cheese sauce evenly over the fish.
- Sprinkle the remaining grated cheddar cheese evenly on top to form the gratin topping.
- Bake in the preheated oven for 20 to 25 minutes until the fish is cooked through and the cheese topping is golden and bubbly.
- Remove from oven and let rest for 5 minutes before serving.
