- 150 g brioche bread dough
- 15 g unsalted butter softened
- 1 piece garlic clove minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon black pepper ground
- 1 teaspoon salt fine
- 1 piece egg yolk beaten

- Preheat oven to 200 degrees Celsius (about 400 Fahrenheit).
- Season the beef roast evenly with salt and ground black pepper on all sides.
- Heat a skillet over medium-high heat and add unsalted butter.
- Add the minced garlic clove and fresh thyme leaves to the skillet and cook for 1 minute until fragrant.
- Sear the beef roast in the skillet on all sides until browned, about 2 minutes per side.
- Remove the beef roast from the skillet and let it cool slightly.
- Roll out the brioche bread dough on a floured surface into a rectangle large enough to wrap the beef roast.
- Place the cooled beef roast in the center of the dough.
- Brush the edges of the dough with beaten egg yolk to help seal.
- Wrap the dough around the beef roast, pressing edges to seal completely.
- Place the wrapped beef roast seam side down on a baking sheet lined with parchment paper.
