  • 150 g fresh mackerel fillet skin on
  • 100 ml dry white wine
  • 15 g unsalted butter
  • 1 piece shallot minced
  • 1 piece garlic clove minced
  • 5 g fresh parsley chopped
  • 10 ml fresh lemon juice
  • 50 ml vegetable broth low sodium
  • 10 ml olive oil extra virgin
  • 1 pinch black pepper ground
  • 1 pinch sea salt

Instructions

  1. Pat dry the fresh mackerel fillet with paper towels and season both sides with sea salt and ground black pepper.
  2. Heat olive oil in a medium nonstick skillet over medium heat until shimmering.
  3. Place the mackerel fillet skin side down in the skillet and cook for 4 minutes without moving it to get a crispy skin.
  4. Flip the mackerel fillet carefully and cook for 2 more minutes until cooked through, then remove from skillet and set aside on a warm plate.
  5. In the same skillet, add unsalted butter and minced shallot, cook over medium heat until shallot is translucent, about 2 minutes.
  6. Add minced garlic clove and cook for 30 seconds until fragrant, stirring constantly to avoid burning.
  7. For in dry white wine and vegetable broth, bring to a simmer and cook for 5 minutes to reduce the sauce slightly.
  8. Add fresh lemon juice and chopped fresh parsley to the sauce, stir to combine and remove from heat.
  9. Return the mackerel fillet to the skillet and spoon some sauce over it to warm through for 1 minute.
  10. Serve the mackerel fillet on a plate and drizzle with the white wine sauce, garnish with extra parsley if desired.
