  • 100 g dry red kidney beans
  • 75 g long grain white rice
  • 50 g yellow onion diced
  • 40 g green bell pepper diced
  • 30 g celery stalk diced
  • 1 piece garlic clove minced
  • 300 ml vegetable broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground

Instructions

  1. Rinse dry red kidney beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain soaked beans and set aside.
  3. Turn Instant Pot to saute mode and heat olive oil.
  4. Add diced yellow onion, green bell pepper, celery, and minced garlic to the pot and cook for 3 to 4 minutes until softened.
  5. Add smoked paprika, dried thyme, cayenne pepper, salt, and ground black pepper to the vegetables and stir well for 1 minute to release flavors.
  6. Add drained red kidney beans and vegetable broth to the pot and stir to combine.
  7. Close the Instant Pot lid and set the valve to sealing position.
  8. Cook on manual high pressure for 35 minutes.
  9. After cooking, allow pressure to release naturally for 15 minutes, then carefully release any remaining pressure.
  10. Open the lid and stir the beans gently.
  11. Add long grain white rice to the pot and stir to combine with beans and broth.
  12. Close the lid again and set the valve to sealing.
  13. Cook on manual high pressure for 5 minutes.
  14. Allow pressure to release naturally for 10 minutes, then release any remaining pressure manually.
  15. Open the lid and fluff the rice and beans mixture with a fork.
  16. Serve hot and enjoy your easy vegan red beans and rice made in the Instant Pot.
