  • 1 piece large ripe tomato
  • 80 g ground pork (lean)
  • 10 g unsalted butter
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 5 g fresh parsley chopped
  • 20 g grated Gruyere cheese
  • 10 g dry white bread crumbs
  • 15 ml whole milk
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. Wash the tomato and cut off the top to create a lid. Scoop out the pulp carefully with a spoon and set aside.
  3. In a small bowl, soak the bread crumbs in whole milk for 5 minutes.
  4. Heat unsalted butter in a skillet over medium heat.
  5. Add diced onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
  6. Add ground pork to the skillet and cook until browned and cooked through, breaking it up with a spoon.
  7. Remove skillet from heat and stir in soaked bread crumbs, chopped fresh parsley, salt, and ground black pepper.
  8. Mix well and add half of the grated Gruyere cheese to the filling mixture.
  9. Stuff the hollowed tomato with the pork mixture and place the tomato in a small baking dish.
  10. Sprinkle the remaining grated Gruyere cheese on top of the stuffed tomato.
  11. Place the tomato lid on top and bake in the preheated oven for 25 minutes or until the tomato is tender and cheese is golden.
  12. Remove from oven and let rest for 5 minutes before serving.
