  • 130 g black beans canned drained and rinsed
  • 80 g corn kernels frozen
  • 120 g diced tomatoes canned no salt added
  • 250 ml vegetable broth low sodium
  • 50 g red bell pepper diced
  • 40 g yellow onion diced
  • 1 piece garlic clove minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 10 ml lime juice fresh
  • 5 g fresh cilantro chopped

  1. Dice the yellow onion and red bell pepper into small pieces.
  2. Mince one garlic clove finely.
  3. Add diced onion, diced red bell pepper, minced garlic, black beans, corn kernels, diced tomatoes, and vegetable broth into the slow cooker.
  4. Add chili powder, ground cumin, smoked paprika, salt, and ground black pepper to the slow cooker.
  5. Stir all ingredients well to combine evenly.
  6. Cover the slow cooker and cook on low heat for 6 to 8 hours or on high heat for 3 to 4 hours.
  7. After cooking, stir in fresh lime juice and chopped cilantro.
  8. Taste and adjust seasoning if needed before serving.
