  • 150 g swordfish steak skinless
  • 100 ml coconut milk full fat
  • 50 g onion medium diced
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 60 g tomato medium diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

  1. Cut swordfish steak into bite-sized cubes and set aside.
  2. Heat vegetable oil in a medium pan over medium heat.
  3. Add diced onion to the pan and cook until translucent, about 5 minutes.
  4. Add minced garlic and minced fresh ginger to the pan and cook for 1 minute until fragrant.
  5. Add curry powder, ground turmeric, and ground cumin to the pan and stir well to coat the onions and garlic.
  6. Add diced tomato and cook for 3 minutes until softened.
  7. For in coconut milk and stir to combine all ingredients.
  8. Add swordfish cubes to the pan and gently stir to coat with the sauce.
  9. Season with salt and ground black pepper.
  10. Cover the pan and simmer on low heat for 8 to 10 minutes until swordfish is cooked through and tender.
  11. Remove from heat and sprinkle chopped fresh cilantro on top before serving.
